Mac and cheese is a lovely childhood dish for so many but when you’re navigating an intolerance to cow’s milk, it can be tricky. Never fear, steaming some veg and adding lashings of nutritional yeast will do the trick. Nutritional yeast is a vegan alternative to cheese – it’s just as tasty and is packed with vitamins. You’ll be able to pick a bag up from any health food store and most supermarkets too.
Ingredients
Serves 4
- ½ carrot
- ¼ cup cauliflower
- 1 small potato
- ¼ cup nutritional yeast
- ¼ cup water or broth
- 2 spoonful Bubs Australian Goat Milk Toddler Drink
- 1 cup raw pasta (such as spirals)
Recipe
Step 1
Steam the veggies until they’re soft enough to mash with a fork.
Step 2
Pop the pasta into boiling water to cook and let your blender handle the rest. Pop all ingredients except the pasta into your blender and process until thick and creamy. You may want to add a little more water or broth to get the consistency you’re after.
Step 3
Now, stir the veggie mixture through the cooked and drained pasta. You can always sprinkle a little more nutritional yeast on top for extra cheesiness if you like.
